Buffalo Chicken Bites!



Buffalo Chicken Bites.

Makes 15-30 depending on size. Serving size is 1/2 for a snack or 3/4 if using as protein part of a meal. They are low fat and high protein.


3 cups shredded cooked chicken,
1/3 cup hot sauce,
3 1/2 oz of soft low fat cream cheese,
1 cup grated lower fat cheddar cheese,  
1/4 cup spring onions,
1/2 cup wholewheat flour,
1 egg & 1 egg white, whisked,
5 handfuls of crushed cornflakes.

Method.

1. Pre heat oven to 180 degrees.
2. Mix chicken, hot sauce and cream cheese together, make sure you mix well.
3. Add grated cheese and onions and stir through.
4. In 3 separate bowls have the flour, eggs and cornflakes.
5. Get some chicken mixture and form into a ball, coat in the flour, then egg and cornflakes. 
6. Repeat until all balls are done and place on a baking sheet.
7. Bake for around 20-25 minutes until golden brown.
8. Serve with dip of your choice, i chose low fat garlic mayo!

These were very messy to make but would be lovely to make with your children, it would make a nice change from cupcakes and cookies! Although i would miss out the hot sauce if making for children! They are delicious and a great high protein low fat snack, it's easy to make a bunch of these and shove them in the fridge ready for snacking or adding to a simple salad!

Liverpool weekend!

On Friday, we packed up and went off to Liverpool, Sienna's first time going & meeting some of Warren's family! It takes agggges to get there so we made sure we had some stops in the service station to feed Sienna and let her have a stretch etc! 



Service stations are so bad for naughty food and as much as i told myself i was going to try and keep it healthy, that just didn't happen. Well, it was a weekend away after all :) I got my magazine to help me get back on track when we're home and make me feel a little better about it, haha!
 When we were about 25 miles from the hotel, we go stuck in traffic on the slip road. There had been an accident but luckily we had missed most of it and were only waiting for about 20 minutes! I managed to feed Sienna before we got moving again!



It was so nice to arrive at the hotel! We didn't get there until the evening so we chucked our stuff in the room, met up with Warren's cousins & Dad & Step mum and went to bed! We had some playtime with Sienna on the bed before we went down to the bar, again so she can stretch! 



Sienna had a travel cot in the room and i was a bit worried if she would sleep well, but she was so good! She slept from about 11-6 which was good!



Morning! 



We got up and got ready & met for breakfast which was yummy! Again we had a little photoshoot! haha! I also had time to curl my hair which was so nice, i miss my conical wand!



We then went to Warren's Nan's and she met Sienna for the first time, it was so cute! 


We all loaded into the cars (there was about 10 of us and 3 babies!) and went shopping in Widnes. I got some bargainssss it was lovely, i hardly ever go shopping these days! I will post about them on my beauty blog soon! We then took Warren's Nan home, headed back to the hotel and chilled for a few hours and then went down to the restaurant for dinner. 




We had some fun time and took lots of photos, mummy & daddy had silly face time, haha!


We then had another early night and got Sienna to sleep, again she was so good and didn't wake until 6:30! We were going out for Sunday lunch for Warren's Nan's 80th birthday so i wanted to dress up a bit, i wore my new skirt i got from the Widnes market, i LOOOVE it! I loved this outfit :)



While we were waiting in the car for everyone to be ready and loaded up into the cars, We got Sienna out her seat to have a little drive ;)




She is just the cutest! 



We got the the pub, it was cute and cosy and we all gave Nan her presents and Sienna had cuddles with everyone.







We headed straight home after the meal because they had given severe weather warnings so we got ready for the long journey ahead with a million stops! ;)

We didn't have dessert so when we stopped on the way home we grabbed a coffee and some cakes to finish our weekend off! Yummy! Carrot cake is our favourite  & will be our wedding cake ;)


We got home about 8:30pm and i was straight back to work.. washing, cleaning etc! A women's work i never done! 

We had such a lovely weekend, i'm just so sad it goes so quickly! Warren still has today and tomorrow off though so he had taken Sienna out this morning and i have a few hours to myself, i have a face mask on blogging and going to do a workout without stopped every 2 minutes to see to Sienna! Not that i mind of course, but it takes twice as long. 

Now it's back to healthy eating & working out, i have missed it!

Quinoa Breakfast Bars!

Yet again, i have been making more of Lindsay's recipes. I am just obsessed i know! But they are all so good, she really is a genius! 

When i saw these i knew i wanted to make them. As part of my weight loss programme, i am trying to add more protein with less carbs to my diet. Quinoa is a brilliant protein rich carb and i have been searching for some good recipes.



Quinoa Breakfast Bars.

1/2 cup wholemeal flour,
1 cup cooked quinoa,
1 cup oats,
1/4 cup chopped nuts,
1/2 tsp cinnamon,
1/2 tsp baking soda,
1/3 cup peanut butter,
1/4 cup honey,
1 egg white,
1/3 cup applesauce,
1tsp vanilla,
1/2 cup raisin and cranberries.


Method.
Pre heat oven to 200 degrees.

1. Combine applesauce, vanilla, egg white, peanut butter and honey in a small bowl.
2. Add the remaining ingredients and stir until combined.
3. Spoon into greased 8x8 pan and bake for 30 minutes or until golden brown.
4. Let cool and cut into 6 bars.
5. Store in refrigerator.

I LOOVEE these bars, they are a great swap for flapjacks which i adore, the texture is so yummy. These are healthier because of the protein and more natural ingredients! 






2 week progress pictures!

This is a bit overdue as i am on the start of week 4 now but thought i would do my progress pictures from week 4. Seeing my body changing is great motivation to keep going and makes me know it's all worth it. 


So this is after 2 weeks of eating healthy/clean and working out 4 times a week. I can see a small difference but i can see the areas i want to work are my arms and stomach. I'd like smaller thighs too but they are always big no matter what i do, they just tone up.

On 1st Feb i started #FEELFABFEB (see previous post) and i am LOVING it! It's a lot more intense, i am working out 6 days a week for the whole of February and do cardio & a lot of the same body group on one day. I am on day 5 and i can already see results and more definition in my abs after only 2 'abs and core' sessions in those 4 days and 1 rest day! 




Saturday i swapped with my Sunday rest day as we were so busy! We also went out Saturday night & Sienna stayed with Grandma, we had a good night but didn't get home until 3am as Warren did the DJing so we had to stay until the end and then pack everything up. Sienna then decided to wake at 6am and 9:30am so i was exhausted Sunday, but still did my workout even though it was haarrrdddddd!!  

Yesterday was a hard workout, It was my 2nd abs and core workout & i definately felt them burning! (actually felt they were ripping!) felt SOO good! Although some of the moves i found impossible, i did what i could. 




This weekend we are in Liverpool, Sienna is meeting some of Warren's family for the first time which is so exciting! I always love going to Liverpool. I had planned to get up early on Saturday and do a workout in the hotel room, but realistically i don't think that will happen. So i plan to add 15 minutes extra cardio onto my workouts for the next 4 days to make up for that 1 hour of cardio. Phew!

Today is my first 'Butt & Legs' workout and i know it's going to hurt, my thighs always burrrrn! Not really looking forward to the 'My thighs are dying' workout!! ;)

Right now me and Sienna are just having playtime on the sofa.



 I'm just going to chill and watch some youtube videos and then trying to get a workout in if Sienna takes a nap! If she doesn't i will wait until tonight when Warren is at football training & hopefully Sienna is in bed! There's nothing else on the agenda today except chores! Need to get Sienna's new cot bedding on, it is soo cute!

#FEELFABFEB & Wild Child!

It looks amazing and i am going to try my hardest to follow the whole thing! I am sure this is going to really change my body and be a challenge so i'm looking forward to it and wanted to share it with you!

Before i read my emails, i had already done Tone It Ups Wild Child which i LOVED!


 I didn't do the hula hopping or the extra dance break to a song as i was in a bit of rush to get to my mums for lunch and had to get Sienna ready! But it was a great easy, quick sweat session!  
Tonight i will do my first day of #FEELFABFEB! Today is abs and core and i just know it's going to kill me!
